Our Process

The Art of the Bean

Thanks to our meticulous technique, Jelly Belly jelly beans set the standard by which all jelly beans are judged.

Sugar, water, and syrup come together in large kettles, where careful timing and technique help transform the hot slurry into future bean centers.

The warm candy flows into dimpled starch molds, then rests as each center takes shape. Patience gives every bean its structure and signature form.

Once released from their molds, the centers move through a careful preparation step. Each flavor pauses on its own timeline before moving forward.

Syrup, sugar, tumble, repeat. In gleaming drums, flavor experts build soft shells by sight, sound, and feel. Timing is everything.

A final tumble brings the gloss. Then the beans rest again, developing their signature sheen in a room alive with color.

Only jelly beans with just-right flavor, shape, and size earn the Jelly Belly name. Batches are inspected by hand before securing a stamp.
